
As a native Rhode Islander, attending culinary school locally, Chef Peter Hand's beginnings started at one of the finest establishments in NYC. His journeys along the way and back to Rhode Island have cultivated his love for cooking and the inspirations for his touch of modern nostalgia aboard the Grand Bellevue- Rail Dining Experience.
Chef Hand and his team's mission is to provide guests with an unforgettable globally inspired culinary experience combined with a unique way to explore Rhode Island's taste. Each menu offering is a carefully inspired seasonal dish with a fusion of nostalgia and modern cuisine.

With locally sourced ingredients, each morning from scratch, our Culinary Team prepares the menu of the day; cooked right on board the train in our 800sf kitchen; one of the largest on rails across this nation.
From behind the bar, our Mixologists are consistently shaking up things with one of our signature drinks or a good'ole standby. They enjoy the creativity of their finely crafted cocktails or a simple request for a railroad classic. With the leisurely movement of the train, the view's of Rhode Island passing by, rest assured there is always something refreshing being stirred up for the guests.

Every person on our train is committed to their craft, and it shows in the quality of dishes we serve and the journey we provide. Working on a moving train takes skill, dedication, and pride.
